They probably were ametures, and took the knife as a scare tactic, got suprised that he resisted, and stabbed out of panic.
Exactly what happened to my mate a couple of months ago, got asked for his shoes in town, he said "fuck off" and they stabbed him once in the gut and gapped the scene.
